Anne's Grilled Vegetable Salad

Ingredients
- 1 Eggplant
- 3 Texas 1050 onion
- 3 Corn on The Cob
- 1 pound cherry tomatoes
- 1 pound summer squash variety
- I bundle asparagus
- 2 red bell peppers
- 2 yellow bell peppers
- 1 log goat cheese
- Extra virgin olive oil
Instructions
- 1. Heat a grill to medium
- 2. Wash Veggies, Slice eggplant, onions, squash, bell peppers into ½ inch pieces and brush both sides with olive oil
- 3. Brush cobs with olive oil, Brush tomatoes with olive oil and place on grilling pan
- 4. Grill all vegetables flipping once until just tender. Remove corn as soon as grill marks appear.
- 5. Dice veggies into bite sized pieces, cut cornels from cob and combine into a bowl with tomatoes
- 6. Sprinkle with salt and pepper and vinaigrette (1 part olive oil, 1 part red wine vinegar)
- 7. Toss in goat cheese while warm to create a creamy dressing
