Ingredients
  1. 1 Eggplant
  2. 3 Texas 1050 onion
  3. 3 Corn on The Cob
  4. 1 pound cherry tomatoes
  5. 1 pound summer squash variety
  6. I bundle asparagus
  7. 2 red bell peppers
  8. 2 yellow bell peppers
  9. 1 log goat cheese
  10. Extra virgin olive oil
Instructions
  1. 1. Heat a grill to medium
  2. 2. Wash Veggies, Slice eggplant, onions, squash, bell peppers into ½ inch pieces and brush both sides with olive oil
  3. 3. Brush cobs with olive oil, Brush tomatoes with olive oil and place on grilling pan
  4. 4. Grill all vegetables flipping once until just tender. Remove corn as soon as grill marks appear.
  5. 5. Dice veggies into bite sized pieces, cut cornels from cob and combine into a bowl with tomatoes
  6. 6. Sprinkle with salt and pepper and vinaigrette (1 part olive oil, 1 part red wine vinegar)
  7. 7. Toss in goat cheese while warm to create a creamy dressing
