Cowboy Tom’s Dessert Pancakes with Balsamic Cream and Fresh Strawberries

Ingredients
  1. Cowboy Tom’s Pancake Mix (1 sleeve)
  2. 3-pack of fresh strawberries
  3. Fresh mint leaves
  4. Traditional Balsamic vinegar
  5. 1 container of CoolWhip (to keep it simple) Fresh homemade is always better if you have the time.
Instructions
  1. Slice strawberries as desired and place in a bowl. Add roughly 1 tablespoon of sugar, 1 tablespoon of Balsamic vinegar, and sliced mint leaves. Stir mixture until blended and set-aside.
  2. For Balsamic cream: to container of CoolWhip add Balsamic vinegar to taste (I used probably 3 tablespoons). Mix well.
  3. For pancakes simply follow the directions for preparation on the Cowboy Tom’s Pancake mix. When you are ready to cook them make a smaller than breakfast size pancake (about 4 inches in diameter). Cook according to package directions.
Notes
  1. For plating, place one pancake on dessert plate, spoon on fresh berry mixture, top with balsamic cream, sprinkle with extra mint leaves and garnish with a dusting of powdered sugar.
