  1. 2 tablespoons fresh chives, plus flowers for garnish
  2. 1 sleeve of Cowboy Tom’s buckwheat (there are 3 sleeves
  3. per package)
  4. 1 envelope of Cowboy Tom’s dry ingredients (there are 3 envelopes
  5. per package)
  6. 1 large egg
  7. 2 cups milk
  8. ½ cup milk
  9. 2 ripe avocados (diced)
  10. Imitation crab meat cut into small pieces
  11. 1 cucumber sliced
  12. For the Dressing
  13. 1 Meyer lemon juiced
  14. ¼ cup olive oil
  15. For the Sauce
  16. 1/4 cup mayonnaise
  17. 1 1/2 teaspoons stone-ground mustard
  18. 2 teaspoons fresh lemon juice, or to taste
  1. For the Sauce
  2. 1. In a small bowl whisk together mayonnaise, mustard, and lemon juice. (Mayonnaise may be made 3 days ahead and chilled, covered.)
  3. For the Crab and Avocado Dressing
  4. 2. In a large bowl whisk together the lemon juice, 1/4 cup of olive oil and salt and pepper, to taste. Set aside.
  5. For the Blini
  6. 3. Prepare pancakes as directed on Cowboy Tom’s packaging then stir in by hand, chives, salt and pepper.
  7. 4. Heat griddle over moderate heat until very hot and spray with
  8. vegetable oil spray. Spoon 1-tablespoon mounds of batter onto the griddle and cook until bubbles form around the edges of the blini, about 2 minutes. Flip and cook the blini for about 30 seconds longer.
  9. 5. Transfer the blini to a platter
  10. 6. Toss the crab and avocado in dressing lightly
  11. 7. Top blini with a thin layer of sauce, then cucumber slice, avocado and crab mixture, then chive flower
  1. The pancake can be made a day ahead of time and then warmed up in the microwave just before adding smoked salmon to serve.
