Crab and Cucumber Blini

Ingredients
- 2 tablespoons fresh chives, plus flowers for garnish
- 1 sleeve of Cowboy Tom’s buckwheat (there are 3 sleeves
- per package)
- 1 envelope of Cowboy Tom’s dry ingredients (there are 3 envelopes
- per package)
- 1 large egg
- 2 cups milk
- ½ cup milk
- 2 ripe avocados (diced)
- Imitation crab meat cut into small pieces
- 1 cucumber sliced
- For the Dressing
- 1 Meyer lemon juiced
- ¼ cup olive oil
- For the Sauce
- 1/4 cup mayonnaise
- 1 1/2 teaspoons stone-ground mustard
- 2 teaspoons fresh lemon juice, or to taste
Instructions
- For the Sauce
- 1. In a small bowl whisk together mayonnaise, mustard, and lemon juice. (Mayonnaise may be made 3 days ahead and chilled, covered.)
- For the Crab and Avocado Dressing
- 2. In a large bowl whisk together the lemon juice, 1/4 cup of olive oil and salt and pepper, to taste. Set aside.
- For the Blini
- 3. Prepare pancakes as directed on Cowboy Tom’s packaging then stir in by hand, chives, salt and pepper.
- 4. Heat griddle over moderate heat until very hot and spray with
- vegetable oil spray. Spoon 1-tablespoon mounds of batter onto the griddle and cook until bubbles form around the edges of the blini, about 2 minutes. Flip and cook the blini for about 30 seconds longer.
- 5. Transfer the blini to a platter
- 6. Toss the crab and avocado in dressing lightly
- 7. Top blini with a thin layer of sauce, then cucumber slice, avocado and crab mixture, then chive flower
Notes
- The pancake can be made a day ahead of time and then warmed up in the microwave just before adding smoked salmon to serve.
