  1. Fresh Eggplant, sliced lengthwise in about 1/4 inch slices
  2. Extra Virgin Olive Oil or Olive Oil Cooking Spray
  3. Kosher Salt to taste
  1. Simply lightly brush or spray both sides of Eggplant slices with EVOO. Throw onto a hot grill or grill pan. Cook until tender. Sprinkle with salt, serve immediately.
  1. This recipe is so easy and fantastic. Can be done outside on the grill or inside using a grill pan.
