Ingredients
  1. 1 cup cooked Quinoa (high protein found alongside rice/beans in the grocery store)
  2. 2 cups heirloom tomatoes
  3. 1 cup diced cucumber
  4. 1 cup diced celery
  5. 1 whole avocado, diced
  6. 1 TBLS your favorite low-cal dressing (I used Balsamic Vinaigrette from Stonewall Kitchens - at our Tustin or Irvine Market location)
  7. Kosher salt and pepper to taste
Instructions
  1. Mix all ingredients, serve immediately.
