Quinoa Salad with Heirloom Tomatoes
High protein, low cal, DELICIOUS!

- 1 cup cooked Quinoa (high protein found alongside rice/beans in the grocery store)
- 2 cups heirloom tomatoes
- 1 cup diced cucumber
- 1 cup diced celery
- 1 whole avocado, diced
- 1 TBLS your favorite low-cal dressing (I used Balsamic Vinaigrette from Stonewall Kitchens - at our Tustin or Irvine Market location)
- Kosher salt and pepper to taste
- Mix all ingredients, serve immediately.
