Ingredients
  1. 2 pounds fresh asparagus
  2. Good olive oil
  3. Kosher salt, plus extra for sprinkling
  4. Freshly ground black pepper
On The Stove
  1. Break off the tough ends of the asparagus and, if they're thick, peel them.
  2. Fill large sauce pan with water and come to a slow boil
  3. Add asparagus just until bright green and remove to plate
  4. Empty saucepan and heat 2 TB olive oil
  5. Toss asparagus in olive oil for 1-2 minutes and sprinkle with salt and pepper
Oven Roast
  1. Preheat the oven to 400 degrees F.
  2. Break off the tough ends of the asparagus and, if they're thick, peel them.
  3. Place the asparagus on a baking sheet, drizzle with olive oil, then toss to coat.
  4. Spread the asparagus in a single layer and sprinkle liberally with salt and pepper.
  5. Roast the asparagus for 25 minutes, until tender but still crisp.
